I like to halfway joke about being Type A-Minus.
Type A-Minus is a lifestyle built on tension. Endless partially completed to-do lists. Refusing to meal plan, and angsting over 1 recipe. Strong opinions, loosely held. All told, it’s a resting state of perfectionism with some loose ends. It makes me a highly ambitious person with like 90% follow-through on a good day. Hence the minus.
Anyway, sometimes it gets bad and I work a few too many consecutive hours and forget what dinner is. Adrian swoops in and cooks a really wonderful thing for the two of us. It can be hard for me to let go and let others do things; even when work is actively avalanching and I’m stressed about the wedding and other people’s opinions, mixed with the countless other things I’m annoyed or anxious about. Like I said, a lifestyle built on tension.
So that happened tonight. I got stuck and Adrian saved the evening. We had a really great linguine (De Cecco is a recent favorite pasta brand) with beer-braised bratwurst and peppers and onions and fresh sage. I got my most odious work project done in time for tomorrow. Breathe deep, and start fresh.

MARCELLA HAZAN’S (AND ADRIAN’S) TOMATO SAUCE FOR YOUR HEART(BURN)
It is stupid how good this rich, simple pasta sauce is. It is perfect for indecisive dinner nights. Chill out about the amount of butter. And no, it doesn’t taste like an onion.
Prep time: 5 minutes
Cook time: 45 minutes
INGREDIENTS
1 28 oz. can whole San Marzano tomatoes (don’t drain)
1 white onion, peeled and cut in half
5 tbsp. good (Kerrygold) butter
Healthy of Maldon sea salt
WHAT TO DO:
Combine the tomatoes, butter, onion halves, and salt in a big saucepan. Heat over medium until it just starts to lazily bubble. Cook, uncovered, for about 45 minutes. Stir occasionally, breaking down big tomato chunks with a wooden spoon. Taste and add more salt as needed.
Toss the onion before tossing the sauce … with pasta.
